A comforting, earthy blend of lentils and rice topped with dark, sweet caramelized onions and a cooling yogurt drizzle.
Pre-cook the lentils in 500ml of water for 15 minutes.
Slice the onions into thin rings and fry them in plenty of oil over medium heat for about 20 minutes until golden brown.
Add the rice and cumin to the pot with the lentils.
Pour in 400ml of water, cover, and let simmer over low heat for 15 minutes.
Serve the rice and lentil mixture topped with the caramelized onions.
Serve with the yogurt on the side.
