  • 500gsweet potatoes

  • 1 tspchili powder

Instructions

    Preheat oven to 200°C for sweet potato fries. Peel and cut sweet potatoes into fries, toss with oil and roast for 30 minutes until tender and slightly crispy.

    Rinse and drain black beans. Mash half of the beans in a bowl.

    Finely chop onion, garlic, and jalapeno (remove seeds for less spice).

    Add remaining whole black beans, chopped vegetables, breadcrumbs, cumin, chili powder, and a pinch of salt and pepper (pantry staples) to the bowl. Mix well.

    Form the mixture into 4 patties.

    Pan-fry patties in a lightly oiled skillet over medium heat for 5-7 minutes per side, or bake at 180°C for 20 minutes.

    Mash avocado with lime juice, a pinch of salt, and pepper to make avocado cream.

    Serve burgers on buns with avocado cream and sweet potato fries.
